Quick Primal Keto Avocado Salad
This fresh summery salad can be thrown together in just a couple minutes with simple ingredients that compliment each other and don’t sabotage your low carb goals. This makes a great primal keto snack or side dish when you want something quick, but a little more special than just an avocado!
- Avocado, Cubed
- Sheep Milk Feta
- Red Onion, Thinly Sliced
- Dill (or another herb)
- Apple Cider Vinegar
To make this simple salad, just scoop out your cubed avocado, tear your dill up and add it (plenty of herbs would be tasty in this and give it a different twist), add your red onion, a splash of apple cider vinegar, and crumble your cheese in. I like feta, because raw sheep milk cheeses are much easier to digest and less inflammatory than cows milk for most people. Also it has a strong flavor, so you don’t need much.
This would be good with goat cheese or another crumbly cheese as well. You can experiment with the herbs too. Grab whatever you have in your garden and throw it in! It almost had a cojita-like vibe with the avocado, so cilantro would take the dish in a totally different delicious direction.
When you get ready to add your salt, keep in mind how salty the cheese you used was. Feta is pretty salty, so it doesn’t need as much added salt as if you used goat cheese. Taste and adjust the salt and vinegar if it needs more. Enjoy!
